‘Tis the season for pumpkin chai goodness! In Southern California, I throw a party in my head anytime there’s a crisp chill in the air. It’s actually cold out, I say to myself. I figure this must mean it’s time to cozy up to a warm drink and watch our holiday movies (Elf, The Holiday, The Family Stone, Love Actually). Okay, so maybe I have a little more time before I fully invest in these festive shenanigans (it is back in the 80’s and 90’s after all). But it is definitely time to get your happy chai on.
A Smoothie with Benefits. My Oh My Happy Chai recipe is teaming with vitamins, minerals, antioxidants and enough sustaining energy to keep you dancing along through your morning. The only sugar comes from the pumpkin and 1/2 banana. Yet since it’s paired with healthy fats, fiber and protein found in flaxseed, raw almond and VegaOne Nutritional Shake, your blood sugar levels won’t spike like a wild banshee. How do I know this? I’ve been doing my own glucose testing this week for my pregnancy and was able to observe some fascinating finds. My blood sugar levels were the most consistent after my morning smoothies compared to any other meals I’d have. Interesting side note: anytime I ate out or brought in pre-made foods (even if they were gluten-free, dairy-free, plant-based and nonGMO, my blood sugar levels would spike. Hmmm).
Measure Me. I’m a simple gal in the morning, I don’t usually use measuring tools. Can you tell I’m more of a “throw it all in and see what happens” type of gal? So to keep things in the “go by feel” spirit, you’ll see the following measurements are mostly with your hands. I know, I know, we all have a different hand size. And that’s just happy chia dandy.

- 2 cups filtered water
- 2 scoops VegaOne Nutritional Shake – Vanilla Chai
- 1 handful of raw almonds
- 1/2 can organic pumpkin
- 1/2 banana
- 2 tbsp flaxseeds
- 1 handful of ice
- 2 handfuls of organic spinach
- Sprinkle of sea salt
- Sprinkle of cinnamon
- Do you prefer a thinner consistency for your smoothies? Just add some extra water.
- Blend all ingredients together until smooth consistency. Makes approximately 2 servings.
- Optional: top with cinnamon, nutmeg and / or cacao nibs
